2 large eggs
1 1/2 cups flour
1/2 cup cornstarch
2 pounds boneless skinless chicken breasts (cut into 1-inch pieces)
2 tablespoons vegetable oil
1 cup + 2 tablespoons orange juice
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon rice wine vinegar
1 cup granulated sugar
1/4 cup brown sugar
1/2 cup soy sauce
1 tablespoon Sriracha
1 teaspoon crushed red pepper
2 tablespoons cornstarch
2 tablespoons orange juice
4 green onions (sliced)
Orange zest
Instructions
Add the 2 eggs to a small bowl and whisk them together.
Combine the flour and cornstarch in another bowl; mix well.
Pat the chicken dry using a paper towel.
Dip the chicken pieces into the whisked eggs, then coat them in the flour mixture. Shake off any extra flour and set aside. Repeat for all chicken pieces.
