Jalapeño Popper Chicken Salad

A delicious twist on traditional chicken salad with crispy bacon and spicy jalapeños, perfect for lunch or a light dinner.

  • 2 boneless skinless chicken breasts
  • 5 strips of bacon
  • 3 jalapeños
  • 1/2 cup mayonnaise
  • 1/4 cup green onion
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions

  1. Place the chicken breasts in a medium-sized saucepan and cover them with cold water.
  2. Put the pot on the stove uncovered and bring the water to a boil.
  3. Reduce the heat to a simmer and cover the pot with a lid. Simmer the chicken for 14 minutes, then remove from heat.
  4. While the chicken cooks, prepare the bacon on the stovetop. Fry it at medium-low heat until crispy.
  5. Prepare the jalapeños by deseeding and slicing them into small strips.
  6. In a frying pan, add 1 tablespoon of oil over medium heat and sauté the jalapeños until soft, about 10 minutes.
  7. Add 1/2 teaspoon salt and sauté for an additional minute.
  8. Place the cooked bacon on a towel to drain some grease and chop it into bite-sized pieces.
  9. In a small bowl, combine mayonnaise, green onion, onion powder, and garlic powder.
  10. Once cooked, remove the chicken from the water and shred it using two forks.
  11. In a large bowl, mix the shredded chicken, mayo mixture, sautéed jalapeños, and chopped bacon until everything is evenly combined.
