A hearty and flavorful one-pot dish from Louisiana, combining rice with chicken, sausage, and shrimp.

Ingredients

  • 1 cup chicken, diced
  • 1 cup sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Creole seasoning
  • 2 cups rice
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add the chicken and sausage, cooking until browned.
  3. Add the onion, bell pepper, celery, and garlic; sauté until the vegetables are softened.
  4. Stir in the diced tomatoes, rice, Cajun and Creole seasonings, salt, and pepper.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
  7. Add the shrimp and cook for an additional 5 minutes.
  8. Fluff with a fork and serve hot.

Notes

Garnish with fresh parsley or green onions. Pairs well with crusty bread or a green salad.
