Juicy Grilled Flank Steak Rolls are a delicious option for gatherings, combining tender flank steak with cheese, herbs, and roasted red peppers.

Ingredients

  • 1 pound flank steak
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs (such as rosemary or thyme)
  • 1 cup shredded cheese (such as mozzarella or provolone)
  • 1/2 cup roasted red peppers, sliced

Instructions

  1. Mix olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the marinade.
  2. Place the flank steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 60 minutes (or overnight for better flavor).
  3. Preheat the grill to medium-high heat.
  4. Remove the steak from the marinade and lay it flat.
  5. On one end of the steak, layer herbs, cheese, and roasted red peppers.
  6. Tightly roll the steak up and secure it with kitchen twine or toothpicks.
  7. Grill the rolled flank steak for about 6-8 minutes on each side, until cooked to your desired doneness.
