A delicious and satisfying casserole that combines cream cheese, cheddar, and crispy bacon with a spicy kick of jalapeños, fitting perfectly within a keto diet.

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • 3-4 jalapeños, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cream cheese, garlic powder, onion powder, salt, and pepper in a mixing bowl until smooth.
  3. Layer half of the shredded chicken in a baking dish, then spread half of the cream cheese mixture on top.
  4. Add half of the jalapeño slices and half of the crumbled bacon.
  5. Repeat the layers with the remaining chicken, cream cheese mixture, jalapeños, and bacon.
  6. Top with shredded cheddar cheese.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Let it cool slightly before serving.

Notes

For extra heat, keep the seeds in the jalapeños or use more of them. This casserole is perfect for meal prep, as it reheats well.
