A delicious and easy grilled chicken dish inspired by the flavors of the Florida Keys, featuring a flavorful marinade of soy sauce, honey, lime juice, and fresh herbs.

Ingredients

  • 3 tablespoons soy sauce (or Coconut Aminos)
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • Juice of 1 lime
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh cilantro (finely chopped)
  • 2 tablespoons red bell pepper (finely chopped)
  • 4 boneless chicken breast halves

Instructions

  1. Combine the soy sauce, honey, vegetable oil, lime juice, minced garlic, bell pepper, and cilantro in a shallow bowl to create a marinade.
  2. Place the chicken breasts in the bowl, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing the excess to drip off.
  5. Grill the chicken for about 6 to 8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  6. Remove from the grill and let it rest for a few minutes before slicing.
  7. For kebabs, cut chicken into cubes, marinate, and thread onto skewers with vegetables before grilling.
  8. For shrimp, marinate and grill for 2-3 minutes on each side.

Notes

Marinating overnight enhances flavor. Use a meat thermometer to ensure perfect cooking. Preheat the grill for better results.
