A creamy and cheesy potato salad that combines the flavors of a loaded baked potato, perfect for potlucks and gatherings.

Ingredients

  • 4 large potatoes
  • 6 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 scallions, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender. Let them cool, then chop into cubes.
  2. Cook the bacon until crispy, then chop into pieces.
  3. In a large bowl, mix together the sour cream, mayonnaise, salt, and pepper.
  4. Add the potatoes, bacon, cheese, and scallions to the bowl and gently mix until combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Use Yukon Gold potatoes for a creamy texture and better flavor. For extra flavor, try adding garlic powder or onion powder to the dressing. Adjust the amount of bacon and cheese to suit your taste.
