A hearty meal combining roasted potatoes and seasoned ground beef, perfect for busy weeknights or meal prepping.

  • 48 oz lean ground beef (93/7)
  • 1 packet spicy taco seasoning
  • 10-12 yellow potatoes, cut into squares
  • Garlic powder
  • Paprika
  • Chili powder
  • Salt
  • Pepper
  • Olive oil for cooking
  • Avocado spray for potatoes

Instructions

  1. Preheat the oven for the potatoes.
  2. Cut the yellow potatoes into squares and coat them with olive oil and seasonings (garlic powder, paprika, chili powder, salt, and pepper).
  3. Spread the potatoes on a baking sheet and bake until golden brown.
  4. Cook the ground beef in a skillet until browned. Add the spicy taco seasoning and mix well.
  5. Layer the cooked beef and roasted potatoes in meal prep containers.
  6. Serve warm or store in the fridge for meal prep.

Notes

Adjust the spices to taste; you can use leftover beef or chicken to save time.
