One Pot Chicken and Rice

A comforting meal of tender chicken and fluffy rice, all cooked together in one pot for easy cleanup.

Ingredients

  • 1½ cups uncooked basmati rice
  • 6 chicken thighs
  • 1½ tsp mixed herbs (or Italian seasoning)
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp olive oil
  • 1 cup onion, chopped
  • 1 Tbsp butter
  • 3 cups low-sodium chicken stock
  • Salt and pepper to taste
  • ½ cup green onions to garnish

Instructions

  1. Mix smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper in a small bowl.
  2. Rinse the rice until the water runs clear and set it aside.
  3. Add the chicken thighs and remaining seasoning to a larger bowl; mix until coated.
  4. Heat olive oil in a pot over medium-high heat and sear the chicken skin-side down for 3 minutes on each side.
  5. Remove the chicken and place it on a plate.
  6. Sauté chopped onions in the same pot until soft and translucent; add butter and stir until melted.
  7. Stir in the rinsed rice and toast for 1-2 minutes.
  8. Pour chicken stock over the rice, add reserved seasoning, and stir to combine.
  9. Arrange the chicken over the rice, cover, and cook on low-medium heat for 15-20 minutes until rice is tender.
  10. Garnish with green onions, cover, and let stand for 3 minutes before fluffing with a fork and serving.

Notes

For added nutrition, feel free to include vegetables like peas or carrots. Adjust seasoning to taste.
