Delicious and festive meringue kisses colored red and blue, perfect for celebrations like the Fourth of July.

Ingredients

  • 1 cup superfine sugar (or granulated sugar pulsed in a blender)
  • 1/4 teaspoon cream of tartar (or 1/2 teaspoon lemon juice or vinegar)
  • Pinch of salt
  • Red gel food coloring
  • Blue gel food coloring

Instructions

  1. PREHEAT the oven: Set your oven to 200°F (93°C) and line two baking sheets with parchment paper for best crispness.
  2. PREPARE the mixing bowl: Use a clean, dry metal or glass mixing bowl. Avoid plastic, as it can hold onto fat, which interferes with meringue formation.
  3. WHIP the egg whites: Add the egg whites, cream of tartar, and a pinch of salt to the bowl. Beat on medium speed until soft peaks form.
  4. ADD the sugar: Begin adding sugar one tablespoon at a time, beating well after each addition. Continue whipping until the meringue becomes glossy and holds stiff peaks.
  5. PREPARE the piping bag: Using a clean food-safe paintbrush or skewer, paint vertical stripes of red and blue gel food coloring inside a piping bag fitted with a large star tip.
  6. FILL the bag: Carefully spoon the stiff meringue into the piping bag, avoiding excessive smudging of the colored stripes.
  7. PIPE the meringues: Pipe small swirls onto the prepared baking sheets, spacing them about one inch apart.
  8. BAKE: Place the trays in the oven and bake for 1 hour 15 minutes. Do not open the oven during this time.
  9. COOL in oven: After baking, turn off the oven and let the meringues cool inside for 1 hour.
  10. REMOVE and store: Once fully cooled, remove the meringues from the parchment. Store in an airtight container at room temperature for up to one week.

Notes

Ensure all mixing utensils are clean and dry. Use room temperature egg whites for better volume. Consider adding a small amount of vanilla extract for extra flavor.
