Delicious and healthy protein muffins perfect for breakfast or a snack.

Ingredients

  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mashed banana
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk (or any milk of your choice)
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup blueberries (optional)
  • 1/2 cup pumpkin puree (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the oat flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the mashed banana, applesauce, honey or maple syrup, and almond milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in any optional ingredients like chocolate chips, blueberries, or pumpkin puree if desired.
  6. Divide the batter evenly into the muffin tin.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

Experiment with different types of protein powder and add nuts or seeds for extra crunch.
