A light and flavorful salad combining couscous with fresh vegetables, perfect for warm weather.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring water to a boil in a saucepan. Add couscous, remove from heat, cover, and let sit for 5 minutes. Fluff with a fork.
  2. Combine cooked couscous, cucumber, cherry tomatoes, red onion, and parsley in a large bowl.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

For extra flavor, add garlic powder or crumbled feta cheese. Customize with other vegetables like bell peppers or corn.
