A crisp, bright cucumber salad that’s quick to prepare and refreshes any meal.

Ingredients

  • 4 Persian cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • Salt, to taste
  • Fresh dill, chopped, to taste
  • Black pepper, to taste

Instructions

  1. Thinly slice the cucumbers and red onion.
  2. Sprinkle with salt and let sit for 10 minutes, then blot excess water.
  3. In a bowl, whisk together rice vinegar, honey, olive oil, and black pepper.
  4. Toss the cucumbers and onion with the dressing and add fresh dill.
  5. Chill for 10 to 20 minutes before serving.

Notes

For variations, try adding yogurt for creaminess or jalapeños for a spicy kick. Serve alongside grilled proteins or hearty salads.
