A comforting and easy-to-make casserole that uses leftover rotisserie chicken, creamy soup, and a blend of flavors, perfect for busy days.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cups cooked rice or pasta
  • 1 cup frozen mixed vegetables (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded rotisserie chicken, cream of chicken soup, sour cream, cheese, rice or pasta, mixed vegetables (if using), garlic powder, onion powder, salt, and pepper.
  3. Mix well until everything is evenly coated.
  4. Transfer the mixture to a greased baking dish and spread it out evenly.
  5. If desired, sprinkle breadcrumbs over the top for a crunchy topping.
  6. Bake in the preheated oven for 25-30 minutes or until the casserole is hot and bubbly.
  7. Let it cool slightly before serving.

Notes

For extra flavor, add your favorite seasonings or herbs. You can substitute rice or pasta for quinoa or mashed potatoes.
