A comforting and flavorful soup made with sweet potatoes, coconut milk, and Thai spices, perfect for a cozy meal.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 can (14 oz) coconut milk
  • 1 tablespoon red curry paste
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups vegetable broth
  • 1 red bell pepper, chopped (optional)
  • Salt, to taste
  • Lime wedges, for serving
  • Chopped cilantro or green onions, for garnish
  • Roasted peanuts, for garnish

Instructions

  1. In a large pot, sauté onion, garlic, and ginger until fragrant.
  2. Add sweet potatoes and red bell pepper, and stir for a few minutes.
  3. Stir in red curry paste and mix well.
  4. Pour in vegetable broth and bring to a simmer.
  5. Cook until sweet potatoes are tender, about 20 minutes.
  6. Blend the soup until smooth, adding coconut milk gradually until desired consistency is reached.
  7. Season with salt and serve with lime wedges, garnished with cilantro, green onions, and roasted peanuts.

Notes

This soup tastes even better the next day as the flavors deepen. Adjust spice levels by adding more red curry paste if desired.
