  • 1 cup heavy cream or coconut milk
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups mixed fresh vegetables (like bell peppers, carrots, and zucchini)
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together the heavy cream, chicken broth, minced garlic, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Add the mixed vegetables to the slow cooker.
  5. Cover and cook on low for 360 minutes or on high for 240 minutes, until the chicken is cooked through and tender.
  6. Before serving, shred the chicken with two forks and stir well to combine.
  7. Garnish with fresh parsley and serve.

Notes

For extra flavor, marinate the chicken in the garlic mixture for a few hours before cooking. Adjust veggies as desired.
