A quick and healthy Sheet Pan Cashew Chicken recipe made with tender chicken, crunchy vegetables, and cashews, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup cashews
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • Salt and pepper to taste
  • 2 cups cooked rice or cauliflower rice, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine chicken, cashews, and veggies in a large bowl.
  3. Mix soy sauce, honey, sesame oil, garlic, ginger, salt, and pepper in a small bowl.
  4. Pour the sauce over the chicken and veggies, and toss to coat.
  5. Spread the mixture on a sheet pan in a single layer.
  6. Bake for 20-25 minutes, until the chicken is cooked through and the veggies are tender.
  7. Serve over rice or cauliflower rice.

Notes

Cut the chicken into even-sized pieces for even cooking. Feel free to add or substitute other vegetables like carrots or zucchini. For a spicy kick, add red pepper flakes to the sauce.
