A delicious combination of Sloppy Joes and a hearty potato dish, perfect for family dinners.

  • 1 pound ground beef (or ground turkey)
  • 4 medium potatoes, diced
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Shredded cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by washing and dicing the potatoes into bite-sized pieces. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the remaining olive oil to the skillet. Toss in the chopped onion, green bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables are softened.
  4. Stir in the ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper. Allow the mixture to simmer for 5-7 minutes, stirring occasionally.
  5. Add the diced potatoes, stirring to combine everything well. Pour in about ½ cup of water, cover the skillet, and reduce the heat to low. Cook for 15-20 minutes or until the potatoes are tender.
  6. Remove the lid and check that the potatoes are fork-tender. Stir occasionally and add more water if it looks dry.
  7. If desired, sprinkle shredded cheese on top during the last couple of minutes of cooking. Cover to melt the cheese.
  8. Garnish with chopped parsley before serving.

Notes

Try adding a mix of diced veggies for extra flavor or use plant-based ground meat for a vegetarian option.
