Ingredients

  • 4 chicken breasts
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley (for garnish)


Instructions

  1. Season the chicken breasts with salt, pepper, thyme, and rosemary.
  2. In the slow cooker, combine the rice, chicken broth, lemon juice, lemon zest, and minced garlic.
  3. Place the seasoned chicken on top of the rice mixture.
  4. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the chicken is cooked through and rice is tender.
