A refreshing salad combining strawberries and watermelon with a zesty honey-lime vinaigrette, perfect for warm weather.

  • 1 pound strawberries (hulled & sliced)
  • 1/2 seedless watermelon (cubed or scooped with a melon baller)
  • 6 mint leaves (thinly sliced)
  • 3 basil leaves (thinly sliced)
  • 1/4 teaspoon sea salt
  • 1/3 cup honey
  • 1 teaspoon lime zest
  • 1/4 cup fresh squeezed lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh cracked black pepper

Instructions

  1. Prepare the fruit: Start by washing the strawberries and slicing them. Cut the watermelon into cubes or use a melon baller for fun shapes. Combine the sliced strawberries and watermelon in a large bowl. Add the sliced mint and basil, then sprinkle with 1/4 teaspoon of sea salt.
  2. Make the vinaigrette: In a small bowl or jar, combine the honey, lime zest, lime juice, olive oil, 1/4 teaspoon of sea salt, and freshly cracked black pepper. Whisk or shake until well mixed.
  3. Finish and serve: Drizzle the honey-lime vinaigrette over the fruit salad. Gently toss to coat all the fruit in the dressing. Serve immediately or chill for a bit to enhance the flavors.

Notes

Chill the salad for 30 minutes before serving for better flavor. Try adding crumbled feta cheese or other fruits for variation.
