A refreshing and colorful salad featuring sweet corn, fresh veggies, and zesty lime, perfect for warm weather.

Ingredients

  • 1 ripe avocado, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the corn, avocado, bell pepper, cherry tomatoes, red onion, and cilantro in a large bowl.
