Quick and healthy Chicken & Veggie Stir-Fry that is perfect for meal prep, reducing stress and satisfying your hunger.

Ingredients

  • 2 chicken breasts, diced
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and ginger, cooking until fragrant, about 1 minute.
  3. Add diced chicken to the pan and season with salt and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes.
  4. Toss in mixed vegetables and pour soy sauce over the top.
  5. Cook for another 5-7 minutes or until vegetables are tender but still crisp.
  6. Remove from heat and let cool before storing.

Notes

Serve hot over rice or noodles. Store in an airtight container for 4 days in the fridge or freeze for up to 3 months.
