A fun and festive dessert combining sweet cookie crust with creamy filling and fresh berries, perfect for summer celebrations.

Ingredients

Scale
  • 1 tube Refrigerated Sugar Cookie Dough (16.5 oz)
  • 8 oz Cream Cheese (softened)
  • 2/3 cup Sugar
  • 1 teaspoon Vanilla
  • 8 oz Whipped Topping (thawed)
  • 12 oz Fresh Raspberries (3 to 4 cups)
  • 1 dry pint Fresh Blueberries (about 2 cups)

Instructions

  1. Preheat the oven to 375 degrees.
  2. Open the tube of cookie dough and slice it into 1/4 inch pieces.
  3. Place the cookie dough slices on a lightly greased 12-inch pizza pan and press it into an even layer. (If you like, reserve one slice of dough and bake it separately using a cookie cutter to cut a star.)
  4. Bake the cookie crust for 11-12 minutes until it is lightly browned. Let it cool. Meanwhile, wash and dry the berries.
  5. In a bowl, beat cream cheese, sugar, and vanilla together until smooth. Then, beat in half of the whipped topping.
  6. Fold in the remaining whipped topping until well combined.
  7. Scoop a little less than half of the cream cheese mixture onto the cooled cookie crust and spread it all the way to the edges.
  8. Use the blueberries to outline the pizza and create the blue portion of the flag, and top with the star cookie.
  9. Use raspberries to create seven red stripes across the pizza.
  10. Use the rest of the cream cheese mixture to pipe white stripes between the red ones.
  11. Keep the fruit pizza in the fridge until you are ready to serve it.

Notes

Serve chilled. Pairs well with ice cream or whipped cream. Store leftovers in the refrigerator for best freshness.
