A delicious one-pan dish combining tender chicken, sweet potatoes, and flavorful BBQ sauce, perfect for busy weeknights.

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 lb (450g) chicken breast, cubed
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes, cooking until tender, about 10-15 minutes.
  3. Push the sweet potatoes to the side of the skillet and add cubed chicken, cooking until no longer pink.
  4. Mix in chopped bell pepper and onion, cooking until softened.
  5. Pour BBQ sauce over the chicken and sweet potatoes, stirring to combine.
  6. Sprinkle shredded cheese on top and cover the skillet until cheese is melted, about 3-5 minutes.
  7. Serve hot, garnished with green onions if desired.

Notes

Try adding zucchini, corn, or broccoli for extra nutrition. For a vegetarian version, replace chicken with black beans or chickpeas.
