Delicious and healthy Greek Marinated Chicken Kabobs, perfect for grilling with bold Mediterranean flavors.

Ingredients

  • 2 lbs boneless chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Skewers (metal or soaked wooden)

Instructions

  1. Whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a bowl.
  2. Add chicken cubes to the marinade and mix well. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
  3. Preheat the grill over medium heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a slight char.
  6. Serve hot.

Notes

For more flavor, marinate the chicken overnight. You can add vegetables like bell peppers or onions to the skewers.
