A quick and healthy skillet meal that combines lean ground chicken with sun-dried tomatoes and fresh spinach for a nutritious dish packed with protein and flavor.

Ingredients

  • 1 pound lean ground chicken (94% or less)
  • 1/2 teaspoon salt and pepper
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/2 tablespoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup reduced-salt chicken broth
  • 1/4 cup heavy cream
  • 5 ounces fresh spinach
  • Few squeezes lemon juice (optional)

Instructions

  1. Heat a large non-stick skillet over medium heat. Once hot, add the ground chicken and season with about 1/2 teaspoon of salt and pepper. Cook until browned, breaking it up as it cooks. Pour off any excess fat when done.
  2. Add the garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for a minute or so until fragrant.
  3. Reduce heat to medium-low. Stir in the chicken broth and heavy cream until combined. Add Parmesan and stir until melted and smooth.
  4. Let the skillet simmer uncovered for 2 to 3 minutes, stirring occasionally. The sauce will slightly reduce and thicken.
  5. Add the spinach a few handfuls at a time, letting it slightly wilt before adding more.
  6. Continue cooking for a few more minutes uncovered to allow any liquid from the spinach to evaporate. Turn off the heat and season with more salt and pepper if needed. Stir in a few squeezes of lemon juice as desired.

Notes

Serve over whole-grain pasta, brown rice, or quinoa. Can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
