High Protein Taco Pasta

A delicious one-pot meal combining the flavors of tacos with hearty pasta, packed with protein.

Ingredients

  • 8 ounces whole wheat pasta
  • 1 pound ground turkey or beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large skillet, cook the ground turkey or beef over medium heat until browned. Drain any excess fat.
  2. Stir in the taco seasoning and cook for an additional minute.
  3. Add the chicken broth, pasta, cherry tomatoes, black beans, and corn to the skillet. Bring to a boil.
  4. Reduce heat and let it simmer for about 10-12 minutes or until the pasta is cooked and the liquid is mostly absorbed. Stir occasionally.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro before serving. Enjoy your high protein taco pasta!

Notes

This dish can be served with additional cheese, green onions, or avocado. Store leftovers in an airtight container for up to 3-4 days.
