Parmesan Crusted Chicken Sheet Pan Dinner

A delicious and easy one-pan meal featuring tender chicken, crispy potatoes, and vibrant green beans.

Ingredients

  • 1 1/2 lb chicken breast (about 3-4 pieces, 1 inch thick)
  • 2 T olive oil
  • 2 garlic cloves, minced
  • 1/3 c grated parmesan
  • 1/3 c breadcrumbs (Italian or plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 T olive oil
  • 2 T grated parmesan
  • salt and pepper to taste
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil
  • 1 garlic clove, minced
  • 1 T parmesan (optional)
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F.
  2. Line a sheet pan with parchment paper or spray it with cooking oil.
  3. Mix all ingredients for the potatoes in a medium bowl and stir well to coat.
  4. Spread the potatoes on 1/3 of the pan and bake for about 10-15 minutes.
  5. While the potatoes cook, mix all ingredients for the chicken in the same bowl and coat the chicken well.
  6. Remove the pan from the oven and add the coated chicken.
  7. Toss the green bean ingredients together in the bowl and add them to the pan.
  8. Bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F.
  9. Allow to cool for several minutes before serving.

Notes

For extra flavor, marinate the chicken in the olive oil and garlic mixture for 30 minutes before coating. Serve with extra Parmesan and a light salad or crusty bread.
