Ingredients
- 4 pork chops
- 4 medium potatoes, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh rosemary or thyme (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and pepper. Spread them out on a sheet pan.
- Season the pork chops with salt, pepper, and herbs if using, then place them on the pan.
- Roast in the oven for 25-30 minutes, or until the pork is cooked through and the potatoes are golden and tender.
- Serve warm.

Make sure to cut the potato wedges evenly for consistent cooking. You can marinate pork chops in advance for enhanced flavor.
