Description

A simple and filling weeknight dinner with delicious flavors, all made on one pan for easy cleanup.

Ingredients

  • 4 pork chops
  • 4 medium potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh rosemary or thyme (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and pepper. Spread them out on a sheet pan.
  3. Season the pork chops with salt, pepper, and herbs if using, then place them on the pan.
  4. Roast in the oven for 25-30 minutes, or until the pork is cooked through and the potatoes are golden and tender.
  5. Serve warm.

Notes

Make sure to cut the potato wedges evenly for consistent cooking. You can marinate pork chops in advance for enhanced flavor.
