Steak Elote Tacos are a fantastic choice for summer meals, combining grilled steak and fresh corn for a delightful bite.

Ingredients

  • 2 pieces ribeyes
  • To taste salt
  • To taste pepper
  • 4 ears corn
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese
  • 1 piece lime, juiced
  • 1 piece lime zest (optional)
  • 8 small tortillas
  • 1 piece jalapeño, thinly sliced (optional)

Instructions

  1. Prepare the steak: Season the ribeyes with salt and pepper. Preheat your grill to medium-high heat.
  2. Grill the corn: Husk the corn and place it directly on the grill. Rotate every few minutes until slightly charred, about 10-15 minutes.
  3. Cook the steak: Grill the seasoned ribeyes for about 4-5 minutes on each side for medium-rare, adjusting time based on preference.
  4. Make the sauce: In a bowl, mix together mayonnaise, sour cream, lime juice, and a bit of lime zest if using.
  5. Chop the corn: Once the corn is cool enough to handle, cut the kernels off the cob into a bowl.
  6. Assemble tacos: Slice the grilled steak into thin strips and add steak, corn, chopped cilantro, jalapeño (if using), and a drizzle of the sauce onto each tortilla.
  7. Top with cheese: Finish each taco with a sprinkle of cotija cheese for a salty finish.

Notes
